All the recent posts on beef ribs,made me go and buy some. I bought a 4 rib pack of short ribs at Publix. Since I was making BB for the wife, I only used 2 and froze the other 2.
Here they are before trimming.
After trimming. I usually trim most of the fat off since the hard outer fat doesn't add any benefit.
Added salt, pepper, and some gunpowder.
After 3 hours, removed the BB to foil. First laid out the foil, some Parkay, kosmos honey powder, molasses, and brown sugar. laid the bb meat side down and added some more on the bottom.
I didn't foil the beef ribs, just wrapped them in butcher paper
Now I came to my dilemma --I wanted to put some beans and some asparagus into the smoker. The problem was I wanted to do them at 350* but the ribs I do at 265*. Then I remembered that I added the smoker box to the RecTec.
The upper shelf of the box runs about 100* lower than the main body (lower shelf about 150* lower than the main body.)
So I set the main temp at 350* for the beans and asparagus, and put the wrapped ribs in the upper shelf of the box and they cooked at about 250*--perfect solution.
After about 1 1/2 hours I unwrapped the ribs, put the main temp back down to 260* and put the ribs in. This made the box temp about 150* which was perfect for keeping the beans and asparagus warm.
I don't time the ribs when I put them in after unwrapping and just test them every 15 minutes with a toothpick and take them out when it slides in like butter. This usully varies between 1/2 hr to 45 minutes.
Here they are done and then plated.
This was my first cook using the smoker box, and I am glad I bought it. Sorry if some of the pics are below par in quality.
