I miss the quality and price of Zaycon bacon

It was great bacon at a great price. I have not been able to replicate. Must be why they went out of business.

Too good to be true...

These guys : https://freshfarmsusa.com/ took over for Zaycon. Limited states so far Pappy, but Minnesota is one of them they deliver to now according to their web site. Prices seem to be a bit higher than what Zaycon offered.

No, they don't have a Georgia route yet. I probably won't since I get most of my meat from either Compart Farms, Heritage Farms or Porter Road butcher. Besides, there is just me and my wife now and I don't need to buy in bulk anymore.

I used to buy from Zaycon Foods, but was never impressed with their bacon. Always too fatty. However, I sure do miss the huge chicken breasts and the wild caught Argentinian shrimp though. I like curing my own bacon but life has a habit of getting in the way. If you have a Restaurant Depot, they carry Daley's products(among others) and the Deep Applewood Smoked Bacon is excellent in flavor, and heavy on the meat ratio. It comes in 15# boxes, so I re-bag in ziplocks and freeze. We also have a Business Costco in the area that deals in bulk and restaurant supply and they carry the same product. Restaurant Depot requires a business license to shop there.

I've seen the bacon at Costco business but we intimidated by it's packaging. So repacking has worked for you? I do have a vac sealer. May need to rethink this.

Pappymn, I don't even vacpack it. Although it's mostly just two of us, we always have grandkids stopping by for breakfast. We go through it pretty fast. I use 2 gal. ziplock type freezer bags to divide it up and put in the freezer. With our consumption rate there's not enough time to get freezer burnt. I use the 2 gal. size because it won't fit in a one gal. bag and lay flat. If you have vac bags by the roll, that'd work great. Don't know about Costco Business, but RD has several different slice thicknesses. 10-12/#, 14-16/#, etc. I always have bacon on hand for ABT's.
