Tri-tip and Tators

Wanted to squeeze in a charcoal cook before we get -20 windchill tomorrow. The wind is already here, the temps are coming tonight.

Those of you on the BP forum may recognize the potatoes.  This non-copyrighted recipe is the property of BP. Any reproduction without the consent of BP is strictly prohibited.  Lawyers can't touch me now. ;)


Potatoes, cheese, bacon, sour cream.......how can you miss?

Hollow out some washed russets.



Bake at 400 for 20 minutes



Flip and bake for another 20 minutes.

Dice a pound of bacon and cook until your preferred doneness.  Set cooked bacon aside.

Use the bacon grease and some butter to cook potato innards and an onion. Cook until completely cooked through. Stir in the reserved bacon.

Put a little cheese in the bottom of the potato canoe. Fill with potato/bacon mixture. Top with some cheese.



Melt cheese on potatoes in the oven. 5 minutes. Top with sour cream.

Rubbed Tri-tip with BP Money and JH Pecan rub and reversed seared.



Tri-tip was some of the best yet. You can do the math on the potatoes ;)

You nailed that one!!  I would have to pace my myself if I sat down to a plate of that grub!! I figure if I pace myself I can eat more of the tri and the taters!!!
