I get these urges to cook stuff when my wife is away. She took our daughter back to Ohio Stae after the Christmas break and stayed with her for a week. While she was gone, I made a nice Sunday dinner for my son and I.
I felt like having some good Nashville Hot Chicken, so I whipped up a whole bird and shallow pan fried it in a cast iron skillet. I marinated it in buttermilk, Louisiana Hot Sauce and pickle juice. Double dredged it and fried it up. Made a sauce using butter and lard and spices.
Google Chef John's Nashville Hot Chicken and you'll see what was done. I made some alterations to the flour to suit my taste but pretty much used his recipe as my guideline.
I made some black eyed peas from dry (using pressure cooker) and busted out my rice cooker and made some rice, then used the pressure cooker to make some collards. I made Hoppin' John with the peas and rice, using a ham hock for meat and flavoring. Used one in the greens as well.
I made a batch of buttermilk cornbread in a smaller cast iron pan to go along with the rest of it.
For dessert I made an ugly strawberry cake using real strawberries in the cake and in the buttercream frosting. Google Mamaw Emily's Strawberry cake for the recipe.
My wife wanted me to make it for her when she got back, so I did. It's a shame I had to eat this twice in a week's time
