Just participated as a judge in KCBS' first virtual BBQ competition. This one was for brisket. We judged 10 entries in the usual categories of Appearance, Tenderness, and Taste.
Appearance - each team submitted 3 photos. A before (meat trimmed and rubbed), a during - meat on the cooker, and an after -picture of the finished product.
Tenderness - the team submitted a video demonstrating tenderness - bending the brisket slices, pull test etc.
Taste - the team gave a description of the rubs, marinades, injections used, and how they cooked so you could get an idea of what it would taste like.
Not a perfect system but enjoyable. (Beats watching Joe Exotic)
