What brand are you buying or where from?
The Smithfield brands that I've been getting lately have been relatively clean. Aside from a bone chip here or there.
Smithfield seems to be at most of my supermarkets and Sam's club up north here.

Have no idea what you're talking about...Ball of Yuck???

I usually buy pork butts from a local grocer when they go on sale (usually once a month).  Theirs are pretty lean with good marbling and not a thick fat cap (I usually trim that off anyway).

Have never encountered that "ball of yuck" - even with the butts I get at Sams.

Can you post a picture of it?

My butts come from a butcher shop

It is a gooey, gloppy, even a little grissly glob of fat that is not "good fat'' as we think of fat when cutting up a butt to make sausage  - not sure if that gives you the picture you wanted.....or would want to see ??? :o

I think he is talking about that big knot of fat and meat. That just doesn't want to shred or pull without a fight
