I think sparky has been sandbagging! He is killing the sausage

I learned a lot from the 1st time of making sausage.  I do have to thank sailor for giving me the recipe to work from.  now it's all about refining the seasoning to our taste.  next time more fennel, less pepper, only 3/4 teaspoon of crushed peppers instead of 1 teaspoon.  it is a lot of fun.  wish I would have gotten a bigger stuffer.  seems 10 lbs patchs are the right size.  after I made the last patch my wife said is that all that 5 lbs makes.  we need more next time.  yes dear.   :D

If you plan on making sausage to put away in the freezer for a later date, I notice you mentioned refining the recipe to your taste; in our experience sausage melds seasonings to a little different taste while in the freezer for a couple weeks (we feel it improves). Just a thought before drastically altering recipes!

Looks great sparky! For more even sausages I just put three full turns of the handle then twist. Pretty even ends up something like 17 sausages for 5 pounds and 117-120 for 25 pounds of brats

Nice job with the sausage.  Glad to see the Mrs getting involved!  You just can't beat homemade sausage.
