Got whats left of the Pancetta sliced and vac sealed ready for Nola. Random thickness cuz i gots no slicer.

Wow.. that came out excellent! I have beed afraid to try dry curing but after seeing you do this I gotta give it a go. I might make a trip to Buffalo this weekend and pick up some supplies at the  Sausagemaker outlet. Any advise on basic supplies I should get?

Depends on what kind of dry cure item your going to make.

For sure you need cure #2 and a good book like The Art Of Making Fermented Sausage. TSM carries this book.
