I just bought the new Chris Lilly book,
Fire and Smoke and saw a recipe for chicken thighs that
caught my attention. I decided to give it a shot. I had a package of 4 chicken thighs and I seasoned
both sides with Mo Rockin and then put the following mixture in the pan and over the chicken.
His recipe was for 8 chicken thighs and since I only had 4 so I cut the measurements in half.
Ingredients:
½ stick unsalted butter
½ stick margarine
1/8 cup Worcestershire
1 tsp lemon juice
1 minced garlic clove (I used Penzeys dry minced garlic)
2 tsp of Mo RockinMelt and stir everything together then pour over chicken.
Put on the Traeger Junior burning pecan pellets and cooking at 300.
Once the thighs reached 180 I removed them from the pan and basted them with my homemade BBQ
sauce. I did not use his recipe for the sauce as we like my homemade one.
Another 10 minutes and they were ready.
Plated with some baked beans, potato salad and coleslaw.
I went to a BBQ cooking class a couple years ago and one of the instructors who is a competition cook
did some thighs in just butter. They were good, but I got to tell you these were excellent. These were
extremely moist, tender, and flavorful with very edible skin. The combination of the butter mixture and
the Mo Rockin made this cook rock!
