I got a box, meat loaf, goose jerky, cheese, ribs, chicken and beans

I got a box Thursday.  I called Rec Tec on the previous Friday and asked if I ordered one if I could get it by Memorial weekend.  He said he doubted it but would try.  It was in Kansas City for delivery on Tuesday and I had to call UPS and requests a new date for Thursday as I had meetings with the USAF on Tuesday and Wednesday.  I really wrestled with which Pellet Cooker to get and got some excellent advise from the good folks on this forum and decided that the RT fit my needs and budget.
The box..would prefer it was made in USA

Seasoning burn

I sliced up 10-pounds of goose and marinated overnight with LEMS Hot with an added tablespoon of Habanero pepper powder.  I smoked in the Bradley for 3 hours of hickory and finished in the dehydrator

Finished Goose..very spicy

Here is my deck layout - Bradley in a Suncast cabinet, SRG (still there Tommy), Rec Tec and Genesis

I practiced with the RT by making a meat loaf...SWMBO liked it but said it was better on SRG so it may not get cut from the lineup after all

I brought back some Parmesean and Middle East Halum from Jeddah so gave it 2 hours of Cherry in the Bradley with cold smoke adapter

The ribs I rubbed 2 racks with Cabelas Hot and Spicy and 2 racks with their Mountain Man Bourbon Rub.  I wrapped them and in the fridge overnight.  I sprinkled more rub and put them in the Rec Tec and 275 (per Rec Tec) and I spritzed them with a mixture of apple juice, sugar and imitation butter every 30 minutes for the first 3 hours.  I then foiled for 2 hours and then glazed them for 30 minutes with a mixture of hickory BBQ sauce, South Carolina Sauce, Karo clear syrup, ketchup and a jar of peach preserves.  The ribs were excellent but fall off the bone.  I will cut back on temp and times next time but they were delicious.

Ribs in with Amaze-n smoke tube

Ribs ready to foil

I also did 8 chicken thighs and 10 drumsticks.  I marinated all night with Weber Chicken Marinade with some fresh lime juice, smoked in the Bradley for 2 hours with Apple smoke and finished them off in the Rec Tec at 350...the group said the chicken was really good..will have some leftovers tonight to find out for myself.  I also made some pit beans with a recipe that I found on Cooks web site..I smoked them with the chicken
Chicken and Beans in the Bradley

All in all a good cook with lots of family for a great day.  Sorry I did not get any money shots as family showed up when I reached critical mass while getting everything on the table to eat

Thanks to all who have ever served

Congrats on the new Rec Tec Greg! You will love it.  And- something I discovered when using mine is when using the Amazen Tube - I put it in the belly of the pit, under the heat deflector. It seems to distribute the smoke better than when i lay it on the grate. I am assuming this is because it is now working in conjunction with the pits normal airflow pattern.
