Pork Tenderloin

We had a road trip this weekend so I stopped at the store on the way back into town.  The intention was to get a whole chicken to put on the smoker so we would have lunch fixin's for a couple days.  They were out of chickens (hard to believe but true - I guess there was a run on yard bird at Safeway over the weekend). I ended up grabbing a pork tenderloin instead.  I dusted it with Fine Swine and Bovine and smoked it with apple pellets for about 45 minutes at 175 degrees then bumped up to 250.  I did not have a lot of time becuase it was getting late so I decided to foil it for the last 20 minutes.  It was really moist and tender (guess that's why they call it "tender"loin  :o).  I took it off when it hit IT of 170 and let it rest in foil for a half hour.  That's lunch for a couple of days.

Looks good.  Do you have an "afraid to eat pork if it has a hint of pink" family member?  I am a big fan of 145 degree pork.

I have three "afraid to eat pork if it has a hint of pink" family members (that's out of four of us by the way LOL).  If just me, I would have taken it out at 150 and let rest.
