Small batch of jerky for Nascar race today
« Reply #-1 on: June 15, 2014, 11:10:07 AM »
Used whole meat, sliced it with a knife as I didn't feel like cleaning the meat slicer.
Made up some Veri Veri Teriyaki, cure #1 and a couple of tablespoons of hot pepperoni and mixed it all together and fridge over night. Gave it 4 hours in the bradley with hickory smoke and than finished it off in the dehydrator. It has a good bite to it :)

In the brown bag till race time.
