Honey Ham Sticks

For my first attempt using casings I decided to make TentHunter’s Honey Ham sticks. I followed the recipe to a tee.
I made up the 5 pound batch early Tuesday morning and this morning I decided to stuff and smoke them. I used my
sausage attachment for my grinder. It worked okay, but if I continue to do these I am definitely investing in a
separate sausage stuffer.

Put into the Grid Iron, using hickory pellets, and smoking at 170 degrees. I am shooting for a final temp of 152.


Here they are about an hour after they came out of the Grid Iron.


All cut down to portion out and vacuum seal.


The taste of these is fantastic! Nice mellow ham taste with just the right amount of sweetness! I love how these
taste but I think I will play around a bit with the recipe and maybe add a little heat.  8) ;)

Mike they look great!

Adding about 1 1/4 - 1 1/2 tsp of red pepper flakes (per 5 lb batch) to these works really well for just a bit of heat without really changing the flavor.
