Sure thing, they are very simple to make in the dehydrator. I have done them with a fresh whole pineapple, although this time I bought a tub of peeled pineapple wedges from Sam's. Their advantage was that they had already leached out half of their juices in the container and I got the usable pineapple from 2 pineapples for a little more than the cost of one whole pineapple and a cup of pineapple juice to drink.
For a whole pineapple cut the top and bottom off, peel it clean
Cut it from the top down in 4 quarters
Then slice the core off of each quarter and freeze the quarters
After they are partially frozen I use my hand mandolin set on 2.0 or about 1/16"
Lay them out on dehydrator sheets and dry them out flipping once to make sure they dry good on both sides.
Next time I may get whole pineapples and put the cut pieces in the fridge for a couple of days to get the leached out pineapple juice and speed up freezing time.
