Fund raiser cook for 150

One of my friends is the paid fundraiser where my 3 children went to school.
Called me up & wanted to know if I'll smoke some pork tenderloins.
Called me today & thinks head count will be 150 ???
She's buying a case 24 packs each with about 3 lbs.
We fiqure about 3 servings / lb, there will be a lot of other food.
Plan on keeping it simple, marinate in Italian dressing, sprinkle salt pepper & garlic.
Smoke till 150F , & chill overnite.
The next day after work I'm going to sear on gas grill , slice & serve with a sauce of 1 part mayo, 1 part sour cream , 1 part BBQ sauce & a pinch of cayenne .
Served with mini rolls.
Having to smoke after work so that's the reason for 2 day cook .
Anyone see any glaring errors?

Maybe take the IT into the low 140s, so they don't get overcooked and dry when you are searing those piles of pork?

Ah yes, I see one problem. And it's that I won't be there to sample the goods.  It sure sounds awfully tasty.

Yep, I would stop the cooking at well under 150, maybe around 135 as they are going to climb to about 140 with residual heat.  Next day, just warm them through on your grill.  No need to sear them at that point.  They're already done.

Just got 34 tenderloins on my big cooker.
Have 8 in reserve.
I admire those who cater!
This much at one time is too much like work :o
Think Ill stick to backyard cookin.

First 12 done temps from 140-150F as good as I can do with this many cooking on two levels at one time.
