It's been raining for the better part of three days now with temps in the mid to upper 40's. This damp cold goes right to the bones. Time for some warming chili!
Here's what went in....
I browned a pound of ground chuck in a tsp. of lard. Tossed in about 1/3 lb of pulled pork too. Added an onion, lots of garlic
, 2 T chili powder, 2 tsp cumin, tsp oregano, 1/4 tsp cayenne, tsp Frank's hot sauce. Stir and cook about 10 minutes. Added a can of black-eyed peas, can of garbanzo beans, (was out of pinto) can of diced tomatoes with jalapeno, can of diced fire roasted tomatoes with salsa, can tomato paste, 4 oz can jalapenos, 4 oz can green chilies, and 1 bottle of Modello. Stirred and brought to a boil, then simmered for about 90 minutes. It was bowled up and given a dollup of sour cream, some Cotija cheese, a hunk of corn bread and more Mexican beer to cool the jets! This was perfect heat for a cold day!
