Pastrami in the BEESR

I'm a bit late in getting around to posting this haha. Picked up a couple of corned beef briskets after St. Patties day because I had been waiting to try this for quite some time. I put the corned beef in cold water and let it sit in the fridge for about 24 changing the water twice hours to pull some of the salt out of it. After that, I used a little olive oil on the meat and rubbed it down using Hub's pastrami recipe (I'll link it below) wrapped it in plastic wrap and put it in the fridge overnight. Took about 4 hours using the 15-10-8 method, and I pulled it at about 180 internal. Probably could have pulled it at 170 as some of the smaller pieces got a little dry. The rest of it was tender and delicious! Started as a 3lb, probably cooked down to around 2lb, and was gone in less than a week!

Just for the record, here's the link to my original recipe.

I get a kick out of seeing how much of my writing shows up in places where I didn't post it. The attributions can be funny, too. It's really more of a concept than a recipe. There are lots of ways to smoke corned beef. The most critical part is the soak. If you skip that you'll get some highly salty results.
