I just purchased and did my first smoking using Salmon on the KBQ. It took me about half a year to save up the funds for this machine, and I am glad I did. I did a lot of research on this forum after reading about the big green egg and the KBQ. Special thanks to the thread started by 1Bigg_ER
http://www.letstalkbbq.com/index.php?topic=14993.0 . The salmon tasted excellent and I am very impressed with this fantastic machine that Bill Karau invented. I seasoned it with olive oil, salt, pepper, and I put diced lemons on top. It took about two hours at 235 & it came out extremely juicy with a nice smoky flavor and not dried out at all. I am using Oak Firewood.
I hope to learn a lot and hopefully contribute some awesome recipes over at the stick burner part of this forum.
