The turkey pastrami looks great!  I too make turkey pastrami.  I brine it for a couple days in a brine that I unabashedly stole from Guy Fieri.  Then I use Uncle Louie's Pastrami Rub, wrap in plastic wrap and allow to stay in the frig for a day or so then on to the MAK 2 Star.

WC - did you cut that with a knife or a slicer?  I'm always worried that the turkey will shred and fall apart in a slicer.  Is there a trick to it or are my worries unfounded?

I used a slicer. I cut the breast into two halves and started slicing with the cut side. Some small parts fall off, especially the crust. But that's not too much and I guess it would be the same, if you used a knife.
