I have done breasts and thighs and some mini meatloaves too. If you want to lower the fat, don't use bacon and use a muffin pan with some holes punched in the bottom, use a little olive oil, and do it all in the pan. When I do stacks the bacon helps hold it all together for a nice serving, I like the bacon too! You could use tooth picks instead of bacon. Don

Smokin Don, my apologies. I knew I got the info for muffin pan somewhere but just couldn't remember where. I'm pretty sure I got it from you originally on the pelletheads forum.

You've got some great ideas and I've robbed a bunch of them. Always comes out good and it's also fun to see just what I can come up with for something new.

You keep doing the work and I'll keep stealing it, passing it on and taking the credit.  8)

That's OK IB, I am sure I do the same thing and forget where I got the idea so can't give credit. Some of my ideas come from several sources. I am happy if someone else enjoys my recipes whether I get credit or not! I am sure as I get older it will only get worse, the memory!  ;D  Don
