Doing 2.5 lbs of 90/10 GB Jap-n-Cheese SS Sticks

Cuber for the cheese makes 1/8 x 1/8" cubes



Little over 1/4 cup



Going with LEM mix.

I have the same one Tee. I found it on Amazon.
It does both 1/4" or 1/8" cubes.

Here are the two choppers. They are made by Genius. Google you can find them. If you have a Kitchen collection outlet they have the choppers.

The 1/4 x 1/4 i have had for bout 5 years. The canisters on both just rotate out from the tabs.

Blades are fixed, You just push down to cube.




You can take the plate out by pulling the 2 locks together as shown. This is the 1/4 plate







Here is the 1/8"
The plate and blades stay fixed, you pull an insert from the bottom.

Great idea. I will look into getting a chopper like that.

So, do you like the 1/8" cubes for the sticks better?  Did you loose any more cheese due to melting than with 1/4" cubes?
