I never cooked this protein before.  they looked really good when I picked them up.  no idea whats so ever how to cook them.  so, I pm our new forum butcher (rummm).  we chit chatted some and Sassam.  light bulb went off.  got it.  enjoy my friends.  butcher, this ones for you buddy.

started old school w/ my electric charcoal starter (I love this thing.  no more newspaper). 



got the 22 set up w/ my can method.  I also use a 18" charcoal ring from a WSM for my shorter cooks.



charcoal hot.  into the can.  do not take can off w/ out plyers.  ever.  don't ask how I know this.  I just do.  I know things.  mostly stupid things.



got the big nasty put back together and let open up the vents to get warmed up.



i'm using 1.5 oz of cherry & 1.5 oz of pecan (next time use less).



ok, your probably wondering what protein.  its these babies. 



I've never cooked beef short ribs.  so, call the butcher.  he told me how to do it. 

I used these seasonings on them.  1st cherry balsamic, 2nd money and 3rd a good dose of tatonka dust.



I let them sit until big nasty came up to temp.  good time for a FT.



we have been cruising at 250° or so for about the last 45 minutes.

see ya in 2 1/2 hours.



oh these look good.



got a assembly line set up.  foil then 2 oz of beef broth.





back in the pool for another 2 hours.



ok, 2 hours up.  I unwrapped them and saved the juices in a pan (hehe).





put them back on the smoker.  in the mean time I used the juices and added 1/2 cup of blues hog and 1/2 cup of bulls eye.  warmed up.  oh this is good stuff.



1st drowning.



these babies are at 190°.  done.



just made up some plain white rice, cantaloupe and the star of the show.  my little beef short ribs.



I must say.  wow.  these were so good.  the flavor was outstanding.  the beef flavor really came though.  and no children.  I got to have 2nds.  thanks for looking.  heh, butcher.  thanks buddy.  we made a outstanding meal.  got a kiss and a little butt squeeze for this meal.    ;)

Looks good Sparky!!! Nice cook, usually I see short ribs braised but yours looks tasty! I think you should've got more than a kiss and squeeze for the meal! Don

Great post.  Sure beats my run on sentences with nothing but a picture of the finished product.  ::)

Great looking short ribs!!  I made some quite a while back based on a meal I had in Portland, OR.  I smoked them then finished them in foil with a "chocolate sauce" (as in mole sauce).  Fell right off the bone.  Delicious.  I'll bet yours were, too.
