Really going to stretch your patience with me.

Most of the meat I buy like from RD are for future use. So I bring them home and freeze them. 

If I got a bad piece of meat to begin with, and freeze it, would I know it is bad?

I wouldn't freeze it in the cryovac pkg.....just my 2¢

I give everything a "nose"... we have defrosted stuff that was bad.

It still stinks, or at least doesn't smell "right"

Mr. Rumm,  how would you freeze it. I have 1 pkg of butts and 1 pkg of ribs in the freezer that I never opened.

As I don't have a vac sealer......yet. I think the cryo pack is my best option of imperfect options ???

If you have a vacuum sealer, I'd really recommend it. They cryovac's aren't always sealed.  I pulled out a piece of chuck last night in the cryovac and it leaked all over and down the counter.  Dog was happy, wife not so much.

In any case, the replacement chuck roll, cut into 5 5lb chunks, is on the MAK 2 star getting happy.

I wouldn't freeze it in the cryovac pkg.....just my 2¢

Me too... I take the meat out of the grocery store packaging and put in and vacuum seal in in my Food Saver bags. That way I can see, touch and smell the meat and I know it is is a totally airtight bag when I put it in the freezer.

I would vacuum seal with  a Foodsaver OR wrap in plasticwrap and freezer paper

Just a little tip to those that frequent RD.........The date is actually listed by the day it was cryo'd.  Look for the (3) digit # on the label   ex:  010 = Jan. 10th    312 = Dec. 12th

I always check for the # on the label and try to get the freshest possible meat.
