Doing 5 lbs of all beef country sweet sticks

Here is my dry ingredients.




In glass from the left.
35g nfpdm
3 T honey
42g pure salt
8g Ames Phos
13g brown sugar
4.5g SE

 

On plate from the left
1g cayenne
1.8g ginger
2.0g nutmeg
3.0g garlic pwdr
4.2g black pepper
2.5g ground marjoram
Center 12.5g smoked paprika

I added 6.0g cure 1 to 2T cold distilled water whisk until dissolved.




No time to stuff/smoke so will do that tomorrow.

Hog Dang Rick,  I never heard of some of that stuff you are putting in them sticks.  You using that Sodium Erythorbate as a preservative?  If so how much you using per 5 pounds?

Following this one for sure.

I think those will be Good!! I have a new liking of chili cheese fritos. I'm going to try and duplicate a snack stick mix from the spices off this ingredient list on the back of the fritos  :) Just thinking out loud :)

I think you may have something going there with the dehydrator. When I made sticks taking them to 154° F always left them to moist for my liking.

Put the sticks in a paper bag and stick in the fridge for a few days.  That will take moisture out of them.
