I don't post much, however I'm on here all the time. I have learned so much in my short time here. I could not have made today's meat without all your help.

This is my thanks to all of you!  Came out very good! My family also thanks you even if they don't realize it. :))

I've only done one, and cooked it a little too long. But notes taken and I know what to do next time.

I read, read again and read some more. I used Hubs 123 as a guide. Tweaked some spicing to taste. I also look at old posts from others successful briskets learned the nuances of my smoker to keep a constant. Very long cook, but well worth the results. Sidebox smokers can be touchy.

I'm still new to the offset myself.
I used a Mastercraft I picked up at Sears a couple years ago. Hopefully picking up a Kamado Phase 2 at the end of summer if the price is right.
