i'm still trying to figure out what a waffle iron is  ???

That's that thing, the women folk heat up and clamp onto their hair. To make the hair smoke for a couple minutes, then they take it off and their hair is waffled and wavy!

Its an iron used to straighten out the wrinkles in a waffle.

So I had some ground pork in the freezer so I thought I would try making this. I also had to make some what I call "Plain Ole' Sausage". I had just under 5 pounds of pork so I made ~2.5 lbs of each.
Here is a pic of the final result. I "rolled" the BBQ rib meat that was left in the stuffer and fried some for lunch.
In the pic is the BBQ rib sausage (upper left), plain ole sausage (upper right) and the fried rib leftovers on the plate.

Chris, I think you hit a home run on this as I really enjoyed it.

Yes they were very good. It was like ribs but I did not get the "depth" of flavor I was expecting. But I believe it was because I have only eaten the fried leftover, not the stuffed ones. It may be just the way I fry them ( in a pan with some olive oil) but all my fried leftovers don't have the flavor that I get when I eat the stuffed version of my sausage. I think on the grill they will be fantastic. But alas I am on a trip for work so I can't get to them until this weekend.
