Lawry's Chicken & Poultry Rub

It's only going to be 106ºF today so I decided to test a new rub and muebe's fridge uncovered chicken method.

Found a new to me Lawry's Chicken & Poultry Rub blend at SAM's Club which consists of the following ingredients:  Sea Salt, Garlic, Black Pepper, Paprika, Rosemary, Thyme, Parsley, Celery Seed, Chili Pepper, Thurmeric, Sugar, Onion, and Red Bell Pepper.

Rubbed a chicken breast and quarter on and under the skin with EVOO and the Chicken Poultry Rub.  Normally I would have wrapped the chicken with plastic wrap and rested in the fridge for about 5 hours but today I'm going to use muebe's method of having it rest in the fridge uncovered to allow the fridge to pull some of the moisture out of the chicken and skin ... In the MAK 2 Star with Hickory for a 1 hour smoke (180ºF).  Then bump to 350ºF till the breast IT equals 170ºF.

Noticed that the fridge did have a drying effect on the chicken skin and meat.  Normally after resting in the fridge the surface has a soupy consistency.  Looking good so far ...

Turned out scrumptious!!  The skin was crispy, not crunchy, but quite edible.  We don't eat the skin but I did taste a small chunck  ;)  Allowing the chicken to rest in the fridge without wrapping it in plastic made a noticeable difference.

The Lawry's Chicken & Poultry Rub was quite good and SWMBO gave her seal of approval  ;D  The rub will be added to my stable  :D  :D  ... smoked the chicken for an hour (180º - 210ºF) followed by 45 minutes at 350ºF.

Do Look great Pete!!! Nice color!!! I use Lawry's seasoning salt a lot so have to try the Chicken rub. I have been letting my chicken air dry in the fridge for quite awhile now and think it helps. Don
