I find if you start your meat just hanging a tad out of the horn or tube you can slip them casings on a lot easier. Also spray your tube with pam cooking spray. It helps big time for sheep casings. A longer soak in warm water will help the natural casings get pliable. No matter what you do you will still get blow outs but you can get to the point it only happens once in a while.
Good luck on your new adventure with sausage making. I found the best way to learn is just go for it and it will all come together in the end.
Dang I need to find some time to get busy and make some more sausage.

Yours was less eventful than mine. Mine was a cuss fest of blowouts and meat shrapnel everywhere! That was almost 4 years ago, but to this day when my wife sees the stuffer & grinder coming out, she take a hike!. Smart move setting that up in the garage!

The first sausage I made was with a $49 grinder/ stuffer....?almost lost my religion :o
It was over a year before I got a stuffer & tried again!

LA I did loose my religion on my firts attempt!  I started with a number 32 hand grinder with stuffing horns
