Nice call on the chubs. I'm going to try making one next time.


I just got off the phone with Chris...  I asked him about the mix being pretty wet and he said when he made it his was wet too and he said they turn out great. 

Very interesting. Before I brined the pork like I would ham then ground it up and it also turned out very, very wet.  That's what lead me to try a different approach and start with ground pork.  I'm getting ready to post the pics of the finished sticks.
