Steaks tonight

I am doing a couple of firsts for my steaks tonight. I am using my smoke tube to give the steaks an hour of smoke in the cold grill. I am using Totonka dust on the steaks for the 1st time. I received a free sample when I ordered the tub.

Ok, Dust added a real nice taste and the smoke also was nice. I noticed a lot of juice on the steak which I guess was from the smoke process and the steak overall was great.

Nice looking steaks buddy!  I have been wanting a good steak for awhile now, but won't have it unless it's cooked over coals. Damned weather here is not cooperating at all! So I wait and drool over yours!  :P  ;)

In the tube did you use pellets?  What flavor?  I have the AMAZ-N-SMOKER and have used chips 'cause I can't keep the pellets goin'...may have to go to the tube- it seems to work for everybody here.

B T W, we had ribeyes tonite, too.  Deb took 'em out and applied a little S & P.  Then we let 'em sit a while before puttin' on the Quantum.  Had to use the gasser because of all the rain. (good chance for rain for the rest of the week, too) <sigh>

Anyway, I'll give this technique a try...looks real good.

Yes, I used the RED. I still don't have a good charcoal grill and I don't think I can get a grill as hot as the RED when doing steaks, still one of my fav ways to cook a steak. Using the smoke added a real nice change of pace.

for the tube I tried a couple of things to get the pellets going and have found using a propane blowtorch works the best. It's real easy and fast and once the pellets get goin' they burn real nice. Next time I use it I will take a video of the process and post it.

Were you happy with the amount of smoke flavor you got with a one hour smoke? I have tried the exact same smoke method with my RED, using the AMAZ-N-Tube with pellets. When I have tried this, the smoke flavor was only a hint. I thought about doing the tube longer, but haven't.

I agree with you on doing the steaks on the RED. With the high heat on the RED added with Grill Grates, that is the only way to do steaks for my tribe. In fact, it is so good that way, that we very rarely order steaks out even, at the high end restaurants. It is never as good as home.

BTW---Jaxon--I got a very cheap propane torch (about $25) at Home Depot and it works like a charm igniting the pellets.
