Italian Sweet Sausage, Peppers, and Onions over Cheesy Polenta
« Reply #-1 on: October 13, 2014, 10:18:29 AM »
Talk about comfort food, this is the epitome of Italian comfort food! So with the cool weather here we wanted this for our Sunday meal. First some vino for the cook..... 8). Now that that's taken care of we can brown the sausage, and reserve. Next we saute the peppers, onions, and oregano until they start to brown, add the sausages, a little EVOO, and a touch of salt. This simmers while the polenta is prepared. Broth is boiled, brought down to simmer and then the corn meal is slowly stirred in. Constant stirring while adding a little hot water at times to get a creamy,  soft texture. When it will take no more water it is done. Off heat butter and parmesan cheese is stirred in.
Dinner is ready.....let's eat!

Looks great to me..we do our polenta or corn mush, called Mumiliga, different in Romania...we boil our water, add cornmeal and then wipe bowl with bacon grease. Then we layer cornmeal with about an inch or so of brick or mozz cheese then cornmeal, again till top of the bowl. Bake for 15 min at 350º then dip it out in a bowl and devour. Gonna try yours.  Pam   .☆´¯`•.¸¸. ི♥ྀ.

Pam we do something similar in that we layer the hot polenta with cheese in a bread loaf pan. Chill, slice into slabs and pan fry. Peasant food is ALWAYS tasty!
