Talk about comfort food, this is the epitome of Italian comfort food! So with the cool weather here we wanted this for our Sunday meal. First some vino for the cook.....
. Now that that's taken care of we can brown the sausage, and reserve. Next we saute the peppers, onions, and oregano until they start to brown, add the sausages, a little EVOO, and a touch of salt. This simmers while the polenta is prepared. Broth is boiled, brought down to simmer and then the corn meal is slowly stirred in. Constant stirring while adding a little hot water at times to get a creamy, soft texture. When it will take no more water it is done. Off heat butter and parmesan cheese is stirred in.
Dinner is ready.....let's eat!
