Mc butt & PBC ribs
« Reply #-1 on: January 25, 2013, 10:02:55 PM »
i haven't cooked a butt for a while.  fired up little blackie for some smokie, smokie.

some sparky's orange mustard and alot of FSB.

love the color of my orange mustard on meats.  great flavor profile also.

drowned it in FSB.  sorry about the flash.

onto little blackie for 3 hours of smoke and then 240° for the ride.

this was the the most stubborn butt i have ever cooked.

thats right.  20 hours to hit 195°.

look at that bark.  woof, woof.....

wrapped up w/ bbq sauce and apple juice.

intermission:

otters at the lake the other day.  cute huh.

potty break over.  on w/ the show.

PBC ribs

2 sheets of alum foil for the bottom.

filled up my charcoal basket 2/3 way.

flame on.

oh, i'm doing ribs.  i like to cut my PBC ribs in 1/2 plus i can use 2 different rubs.

6 minutes left.

time for some hanging.

1 1/2 hours later time for sauce.  look at the even color on those ribs.  nice....

backsides.....

1/2 bulls eye & 1/2 blues hog.

back on for 15 minutes to set.

done.  look at these babies.

Waa Laa!

opened faced pulled pork sandwich,  PBC ribs, costco scallop potatoes, peaches and my milk.  a perfect meal.

my wife loved the meal.  got a kiss and a little butt squeeze for this cook.

the end.

Sparky,
How do you compare the taste of your ribs that have received your foil love when cooked on the MAK to the PBC ribs?  I am sure they are all good, but is there a noticeable difference between the two?

I bought one of those Bayou Classic Leg & Wing Rack while I was visiting St. Simons Island.  Today is wing day and I want to cook some wings on the PBC using this rack.  Pictures to follow.

Sorry to barge in on this :)
I've always cooked my ribs either in my Bradley or my Traeger.  Most recently and I mean recently I made one rack in the PBC, rack cut in half and hung.
The ribs were amazing, the charcoal flavor is the best part. Not overpowering but you can definitely tell they were cooked over charcoal. I them sauced them and hung them back to set the sauce. There is just something magical to me that happens to meat when cooked with charcoal.
Anyway back to see what Sparky has to say :) :)

Well said Mike, you get a charcoal flavor from the PBC that you do not get from other cookers!!

that meal looks.... :P :P :P :P :P :P :P :P :P :P

Was doing some fishing last year and had a family of river otters playing right next to me.  guess they were hoping I would catch something.  Oh were they wrong.  Fun to watch.

Need to have you come up this way.  Just breaking ground on a new place on the river.  guy next door landed 100+ sturgeon in two weeks last year.  Steelhead, Salmon, and sea run cutthroat.....   Love fishing but not much for eating.  Need to figure a way run a line down while I am taking a nap.
