The air temp in the cooker was measured in the middle at the sweet spot between the two hanging chickens.
You can see when I first put the chickens in the temp drops and once the chickens start coming up to temp the cooker temp rises to the 300F range. It then maintained around the 307F degree range for the cook so I believe they have got my air adjustment dialed in because that is the temp I like to see for this style cooker IMHO. The ambient temps outside were around 55F and the air was calm.
At around 300F I expect a 2 hour cook time with a 30 minute sauce finish. I am going to start the ribs in a few hours. I also plan on putting the TBE basket in loaded with golden potatoes when cooking the ribs. I will put them in after the first hour because I figure maybe an hour for them to cook
