Thank you TenthunteR (Cliff) for the great idea!

I made these more like breakfast sausage size.

Sheeps soaking.


Mixed up the 5lbs of 80/20 GB with the ingredient's like Cliff did. Into the stuffer.


Onto the MAK with Hickory pellets in the AMZNPS tube. Made one link with collagen casing with the leftovers.


Cold smoke for 1 hour. Then set the Pellet Boss at "smoke" until we reached an IT of 150.


Ice bath and bloom.


A little closer? OK.  ;)


These are going out to PA with me in a few weeks for the Turkey Season opener. Cold beer and some warm beef smokies in BBQ sauce after the hunt. Maybe turkey nuggets too if I'm lucky.  :o

Aren't those jerky racks perfect for smoking small sausages? :)

Yea, those jerky racks are pretty slick! BTW, you can see the little angles I made to support the AMZNPS tube. That worked really well.

I have acreage in Hastings, PA. About a half hour NW of Altoona. Northern Cambria county.

Oh yeah, I see that now. I was so busy looking at the sausages, I didn't notice.  Nice job; It's good to know they worked!  :)
