Just had my midnight snack - pulled chicken, soft roll, a few drops of Sweet Baby Ray, and a scoop of coleslaw. No picture - it's midnight - the time of unicorns...
But I do have to say, the chicken is even better cold and rested for several hours. The rub and the light pecan smoke were just right. I've never made pulled chicken before. I have had it in restaurants, but it was always so over smoked and over sauced that it was almost inedible. This was excellent. The chicken was moist and tender and the flavors just right. Makes me think of Eric Clapton - Slow Hand... This will be a regular at my house - need to order some more rub!
