We be smokin some Pepperoni sticks

The new freezer was delivered this morning so its time to fill her up. Decided to make some pepperoni sticks.   Mixed up a 10 pound load sticks an got them smokin.  Started the project around 8 this morning and just getting around to posting.

Wet mix all mixed up


Wet mix all hand mixed in the meat and ready to be stuffed.


Got them hanging in the smoker.


IT is at 132 at 4pm so it will be a few more hours till they are finished.


Enough ain't enough and too much is just about right.

If you don't mind me asking? What recipe did you use. Is this one of your own or is it a kit. I am going to guess it is your. I am keeping an eye on this one. The meat mix looks nice and spicy.

I would love to make my own peperoni sure looks good and like the idea of making it how you like it
