Well sort of kinda.  ;D This was the Virgin run of Jerky in the Big Boy smoker.  Normally I could only do 4 pound batchs at a time in the 4 rack Bradley.  Last night I mixed up an 8 pound batch and wanted to see how many pounds I could get per rack.  I only bought 2 racks for the trial run.  Got the G-Mat (Frog mat) cut up to the size of the racks and proceeded to shoot the jerky.  Filled up the 2 racks and had a bit left over so had to use 2 Bradley racks to complete the job.

Got a rack all filled up and ready for the smoker

All finished and ready to cut and put in a paper bag and fridge overnight then vac seal


Put 3 hrs of Hickory on them and had the cabinet temp a 150.  The thing that I love about the Big Boy is no more rotating racks every hour.  I did not touch the racks the entire time and after 6 1/2 hrs they were finished.  Don't think I will ever need a dehydrator as I can smoke and dehydrate at the same time.


Enough ain't enough and too much is just about right.

That is a good looking batch. It looks like your big smoke does a very nice job. I would guess you are going to find a better way to do the mixing. My smoke will hold around 50 pounds at a time. I would bet yours will do much more then that. You are making me want to get bust and crank out a batch.

Just so happens that after we talked yesterday I sent you a package.  It has some homemade casings and and order for .....wait for it......a brand new Kirby Mixer.  Yippie!

Nice batch!

My normal max load for my 4 rack Bradley is 5 lbs. Looks like your 8lbs hardly made a dent in the big boy!
