The sticks have lost 40% weight so I cut one of the sticks today. All I can say is WOW, these are the best tasting pepperoni that I have ever tasted!I will be making more of these.

I went for beer and HAPPY that Sandman gave me a good sample of his pepperoni! The best snacking pepperoni I ever had!!! Not too greasy, great taste flavors with a slight kick!!! Thanks Brad!!! Don

It was this recipe but I changed out the fennel and added anise seed. It is a very good recipe. It's not my recipe so I will just give a link, I hope thats ok. http://www.drybagsteak.com/recipe-traditional-pepperoni.php

Nice pepperoni Sandman, that recipe actually comes from the book The Art Of Making Fermented Sausages by Stanley Marianski & Adam Marianski on page 198. All they did was take that recipe and made it for 5 lbs. of meat instead of the 10 lbs the book calls for. To bad they don't even mention the Marianskis  ::)
