After seeing how well the Umai bags worked I figured I would give them a try. This is my first try at dry aging. I went with the pepperoni recipe on the Umai website. Meat all ground and stuffed.

I have the same bags and haven't used them yet.  Watching this one closely.  With my new toy, the Uuni 2, and the fact that we love good pepperoni, this could be just the ticket.
