Got to smoke/cook the sausage from last weekend

Well made a batch of breakfast sausage and some smoked sausage last weekend.  Well I got to cook up the smoked version tonight for diner and man it was good.   Slow cooked it for 30 mins with smoke then turned the heat up to finish

Had to cook in the garage due to rain but hey at least I got to cook outside!!  :D :D :D

These were very good and did learn a lesson about collagen casings, they split easy on the grill.  I do like natural casings better but had these and wanted to try them.  I will use the collagen casings again when I need a smaller sausage.   

This sausage making is really a lot of fun and believe it or not Kimmie likes to join in when grinding the butts up

The smoked sausage looks like it turned out great, even if the casings split some. That final pic just says it all.
