Working on an experiment stick

My son don't like real hot sticks and me having 6 stomach ulcer's two years ago I'm suppose to keep away from the hot stuff also. Not that I ever did  ::)
Any ways I had 6 lbs. of ground beef I needed to do something with and was looking for a mild stick recipe. Not to easy to find as many people seem to load there sticks with every pepper under the sun. So now I made a stick recipe out of pork a few years back and it was very nice but this is beef. Hmmm, lets see just how bad it will be. Made up five lengths of 21 MM brown collagen sticks. So now the recipe I am kind of following says to hang - dry at 35-43° for 12 hours. So the only place I could do this was out in the green house where I know the temps are cool enough now that we are getting cold weather.

After that they will get 4-6 hours of heavy smoke. Bring to IT of 152°
Than they need to dry for 5-7 days 53-64° room temp. My basement will be perfect for this. They should have a 45% weight lose by then. I'll keep you posted as time go on.

Not going to be outside taking to many pictures because its still very cold outside but since I needed to get the smoke rolling I thought I would take at least one.
I will rotate them over in about 4 hours just to make sure the bottoms don't get done before the tops. Thats why I keep them in a loop.

Well that was a total fail.  :( No taste to them at all. Very nothing is all I can say. The dog has some treats coming to him soon.

Sorry they didn't turn out like you wanted. Did you ever get access to Soy Vay Veri Veri Teriyaki?? I have found using 3.3 oz/ pound of meat gives a great jerky stick. It should be about the same in a meat stick. You can add a little crushed red pepper if you want to add a little heat. I found a couple of tablespoons for each 10 pounds of meat worked of fine. You could cut that in half for your stomachs sake. I know you won't give up.

My daughter goes across the border to Duluth shopping at least once a month so yes I have plenty now. Everytime she comes back she brings me 4 or 5 bottles.  ;D

I actually but those sticks in the dehydrator over night @ 115 degrees and being dryer seemed to bring out some of the spices but it still needs more of something. The dog and I chew on one every now and than.  :)
