Got 4 lbs of Swiss brats making today. These are fresh, non smoked

Got my casings doing the soak for a couple hours.

Used up some extra sheep and hog casings i had vac sealed.

Made some mini links.

4 .2 lbs of meat ready to mix. Had to improvise cuz most of my large bowls are in the RV at the dealer getting the once over before we head into it.



Got the Swiss Brat mix all in and mixed. Now stuff em.



Do the sheep casings 1st. Then the hog.





All linked into 3s. Going in a freezer zip lock and into freezer for a few days.

Lookin' real good, Rick.  I'm guessing that your freezer storage space is limited in the new RV.  That means you will probably be making sausage in smaller batches, and more often.  Now if you need a place to store some...
