Son, daughter, and son-in-law coming Wed for Christmas, so time to start the food. Also need to send some of the goodies to my sister in Cape Cod.
The Christmas dinner ham is brining in the fridge and will go in the smoker on Tuesday.
First up are the fatties.
Bacon weave
Spread out the meat - a mix of hamburg and sage sausage.
Add some mushrooms, peppers, onions and cheese.
Rolled in the bacon weave.
Used spaghetti rather than toothpicks to hold the bacon together.
Ready to go into the Bradley.
All done and ready to wrap and freeze
Now on to the pierogi
Made the potato filling (forgot to take a picture). Used the pasta roller attachment to the Kitchenaid mixer to roll out the dough.
Using the pierogi maker - lay a strip of dough, put the filling in the pocket, put a strip of dough on top, roll with the rolling pin.
All lined up and ready for the pool - throw them in boiling water, take out when they float to the top. I then put them on racks, let them cool and throw in the fridge. Once frozen, put them in zip lock bags.
So that was Saturday - today on to the golabki (Polish stuffed cabbage)
Soak the cabbage in hot water for 3-4 hours. While that is happening, brown some chopped up salt pork and onions.
Meanwhile make some white rice. When that is done, mix the rice, salt pork and onions, and uncooked meat of your choice. I used a mix of sage sausage and ground chuck.
Core the cabbage and then peel off the leaves.
Then you need to trim the thick vein on the leaf. Here is a not so good picture of the vein.
When peeling the leafs off the head of cabbage, some tear. Save those and line the bottom of a roaster pan.
Take a leaf, put some of the meat/rice filling and roll the leaf. Place in the roaster pan. After the first layer is done, place some more of the "rejected" leaves on top and start the next layer.
When the pan is full, place diced tomatoes and sauce on top of the last layer.
Place some more of the rejected leaves on top and add some more of the tomatoes.
Cover the pan, put in oven at 350* for about 5-6 hours. Here is the end result. The burnt cabbage on the right is the top layer of the rejected leaves pushed back so you can see the cabbage rolls.
