So my first ever gas grill came on a birthday morning many years ago. Then on a Father's day was a kettle. Then Christmas only two years ago was a Masterbuilt Propane Smoker. And this Christmas was a Pit Barrel Company cooker. Don't I just have an awesome wife!
We don't mind eating, but we realize cooking mistakes will happen when trying to dial in a cooker, and we are forced to learn to eat a little charred or some funky-cooked food from time to time. Kids are so willing yet though. So things are good, and I visit forums like this to extract info, ideas and confidence for a new run at it.
After reading different forums has led me to believe that I don't want to make a career of babysitting a cooker for temps, smoke output and whatnot. And then there are all the tech items of the this/that/those which are fine, but seem to confuse the issue some ... because in the end, its just food we're cooking.
But we want it to be the best food ever, on each and every cook.
I am fairly new to smoking, and honestly I'm very excited about our new PBC! I never was that confident at the grill, and have held an honorable place in my heart for people with great outdoor cooking skills. So far, with the PBC, I feel pretty confident I can leave the house for an hour, so perhaps I'll do more cooking on that for a while. But its sometimes fun to play with the Masterbuilt and a bed of charcoal and an AMNPS. One day maybe we'll get a stick burner... or just go camping instead.
