Since getting the 10 tray dehydrator I’ve been doing a lot of Jerky. I find that I like the dry rub better than a wet rub but still do wet rubs from time to time to mix things up.

Mix for one ib of meat, I find it easier to do it in one lb increments. (Spicy)
I used to slice into strips and then spice-up but I found it easier to do it this way first. Makes flipping the meat easier and I get a better distribution of the spice to the meat.
Bagged and ready for an overnight cure. Notice how quick the meat is turning brown.
Next day (24 hours) racked and ready to dry. I set the dehydrator to 140ish and let it go for 4 hours.
Paper bagged and in the fridge overnight.
All ready. I will keep the jar full and freeze the rest. Once the jar goes down I fill it again. My daughter calls it the magic jerky jar.
