Microwave Potato Chips

In case you are out of potato chips...very easy and GOOD.   
Microwave Potato chips
1 tablespoon olive oil
Kosher salt and freshly ground black pepper
1/2 potato, thinly sliced on a mandolin, very thin
Evenly spread the olive oil on a square of parchment paper and sprinkle with some salt and pepper. Place the potato slices on the paper, making sure there is no overlap, and sprinkle again with salt and pepper. Cook in the microwave for 3 minutes.

I tried that once and the potato screwed up the strings so badly that I could never get it back in tune. I was lucky; I know a guy who tried to play a mandoline and damn near sliced off his fingers.

Perhaps there are some Hawaiian roots or tubers that you could try this on - rather than mashing them into gruel ( poi... :D)

I think I saw this on TV this morning.  My wife had some program on the Food channel on and a similar recipe was shown.  Looked like they would be good.

We have a 4 year old and a 6 year old so we cannot live without a microwave 8)

I could not live w/o my MW. I start my day by making my Quaker oats old fashioned oatmeal in it. In two minutes I have a half cup of  oatmeal ready to go just like you would do on the stove top.

Same here, I do Quaker Steel Cut Oats in the M/W, turns out just as good as stove top and quicker. ;)
