Mo-Rockin' SV Chicken Breasts
« Reply #-1 on: March 05, 2015, 03:33:21 PM »
I thawed two Costco chicken breasts, rubbed them liberally with Savor Spices' Mo-Rockin' Chicken, sealed them and put them in the refrigerator for a couple of hours.  A day would have been better but it's difficult for me to plan ahead.

Next step will be to put them in the hot tub for a little more than two hours at about 3:30 PM.

I love Mo-Rockin' rub - even better in the sous vide, seems to "intensify" things. Killer!

Fresh out of the water oven after almost 3 hours at 140° F.  They look kinda' ugly.

Seared for one minute per side on a super hot gasser.  Still ugly but now with tattoos that never add beauty.

They were cooked perfectly from the thick end to the thin.  Extremely moist throughout.  The taste was subtle but I thought very good.  Marcia judged them to be tasteless.  Next time I'll cook two for her with a rub that has stronger flavor.  Any suggestions?

SV boneless, skinless chicken breasts may not look the best but they are always so tender and moist. So good! Excellent the next day served cold and chopped on a salad.

That's a great idea - will try it!

No not pretty, but when added to another recipe - e.g. pasta - they are delicious!

Agreed, not pretty but a welcome addition to pasta and salad.

I'm going to have to find a way to serve SV breast that she likes, though.  Maybe there's a low-cal sauce or a way to "dress" it.  Search engines are my friend.

Paul a little sea salt might make the difference. Tim's rubs tend to be on the lower end of the salt spectrum. We naturally crave salt and our bodies require it to survive.
