Taking a short road trip next week to see some friends in Ky.

Mixed up some bologna to take.

I only had 2, 2 1/4" casings left so i improvised.

Hanging for 1.5 hours at room temp before the smoker.

In smoker at 130* Amznps tube smoking with hickory.

Trying something different.

Pulled at IT of150* and vac sealed for bloom time.

So far so good.

Regular vac seal bags

Cut the experimental bags from the chubs to cut the loops and rings off.

Damn it worked good. I dont want to break my arm patting meself on the back

Vac sealed into new bags for the trip.
