No fret, toss all the engineers at the issue you want to and you will not solve the issue. Like L.A. said kamado cookers have been around a long time and I'm sure the so called "Perfect" brisket has been cooked problem is no two people would agree on what is "Perfect Brisket" Hell you have a hard time getting two people to decide on what pizza toppings they want at the same time.
The PBC is a heck of a cooker but like any cooker it's not the do all cooker. Besides with that much research and that many people involved can you imagine the $$$$$$ of one of those to hit the market???
PBC's cost far less then that thing and would do a great job or even a home built cooker (which I have a few) and yes to date those cook very well (still working on the Rocket Stove idea )
